Today we’d like to introduce you to Olivia Clancy.
Hi Olivia, it’s an honor to have you on the platform. Thanks for taking the time to share your story with us – to start maybe you can share some of your backstory with our readers?
Clancy’s Irish Pub is more than just a place to grab a pint—it’s a true family legacy. Our building dates back to 1928, and in 1982, it officially became the neighborhood pub so many have come to know and love. Now proudly operated by fifth-generation owners, Clancy’s has deep roots in Ellisville, Missouri. Our sixth-generation kids are already pitching in, learning the ropes, and carrying on the tradition.
At Clancy’s, we believe in more than just good food—we believe in fresh, handmade food, served with heart. Our burgers, wings, and fish have earned a reputation of their own, crafted from scratch with quality ingredients and a whole lot of pride.
We’re also committed to giving back to the community that has supported us all these years—whether it’s through local fundraisers, school sponsorships, or community events.
And we’re not just about the pub itself—we’ve expanded with Clancy’s Tipsy Clover, our mobile bar housed in a converted 1977 horse trailer, serving seasonal cocktails and pub vibes at weddings, festivals, and events throughout Missouri.
Clancy’s isn’t a chain. It’s not a brand. It’s a family-run, one-of-a-kind gathering place where the doors are open, the food is fresh, and everyone’s part of the story.
I’m sure it wasn’t obstacle-free, but would you say the journey has been fairly smooth so far?
Not at all—but it’s been worth every step. Running a family-owned restaurant means constantly adapting, pushing through tough seasons, and making hard decisions. Like most small businesses, we’ve weathered staffing shortages, rising food costs, changing customer expectations, and everything in between. But for us, the biggest challenge has always been balancing family life with the demands of owning and operating a restaurant.
Clancy’s is a huge part of our lives—but so is our family. We’re fifth-generation owners raising the sixth generation right alongside the business. That’s a blessing, but it also means juggling school schedules, bedtime routines, and family dinners—while making sure burgers are grilled to perfection and the fryer never skips a beat.
One thing we’ve learned is that quality has to come first. The food, the experience, the community—it all depends on consistency and care. And that means we need to be present. We can’t just “set it and forget it.” When your name is on the sign, you show up. That’s why we made the decision to change our hours—to protect our family time, but also to ensure we’re giving our best when the doors are open.
We’ve built something that means a lot to our customers and to our kids. And keeping that standard high, while also keeping our priorities straight, has been the most challenging and most rewarding part of this journey.
Appreciate you sharing that. What should we know about Clancy’s Irish Pub?
At its core, Clancy’s Irish Pub is a family-run, community-rooted restaurant that serves fresh, handmade food in a warm, welcoming atmosphere. We’re not a franchise. We’re not a concept. We’re the original—and only—Clancy’s; built on tradition, pride, and hard work.
We specialize in scratch-made pub classics—juicy burgers, award-winning wings, hand-battered fish, and hearty weekly specials made with fresh ingredients. Our food isn’t just good “for a bar”—it’s good, period. We take quality seriously, and we’re proud to say that what comes out of our kitchen is made with care and consistency.
What sets us apart?
We’re hands-on. We’re here every day. We shake the hands, serve the drinks, and make the food ourselves. We think, that personal connection—along with our commitment to community—is what keeps people coming back.
If you take anything away from our story, it’s this:
We’re passionate about what we do, we’re committed to doing it right, and we’re proud to serve the people in our community—not just as customers, but as neighbors and friends.
What makes you happy?
Seeing the restaurant full and filled with laughter, conversation, and the clinking of glasses—that’s what makes us happy. Watching people truly enjoy themselves at Clancy’s, knowing we had a hand in creating that experience, is incredibly fulfilling.
We find joy in the details—making the food ourselves, knowing it’s fresh and made with care. We joke in the kitchen all the time: “Oh man, whoever gets that plate is gonna love it!” It’s that pride in the quality of our work that keeps us going.
We’re happiest when we close up on a Friday night, completely exhausted from a long, busy week. There’s something deeply humbling about looking back and realizing how many people made the intentional choice to get in their cars, drive to our little pub, and spend their time with us. That never stops being surreal—and it never stops making us proud.
Being home with our kids on the weekends makes us happy, too.
We made the decision to be open Monday through Friday so we can have those family moments without sacrificing the heart of the business. The fact that we can still provide a great living for our staff, and a humble but full life for our own family, is something we’re incredibly grateful for. We open on the occasional Saturday, but for the most part, weekends are for family; birthday parties, baseball games, dance recitals, movie nights, bedtime stories, and meals together.
At the end of the day, we’re not chasing fame or fortune—we’re chasing fulfillment. And we’ve found it, one burger, one pint, and one happy customer at a time.
